  • Two young proprietors opened, in their words, the first upscale “farm to fork” restaurant in Valparaiso, IN three years ago.
  • They quickly realized that, beyond the success of their upscale restaurant, there was a strong demand for a more casual craft beer and pizza restaurant in the market. This led them to open a second concept in Valparaiso called Tomato Bar.
  • Based on their successful track record and dedication to high quality food and service, we thought Tomato Bar would be the perfect fit for Shops on Main.
  • Tomato Bar had such a successful launch they had to close two hours early their first Saturday. The volume of customers overwhelmed their expectations and they were concerned about running out of pizza dough as wait times approached two hours.

  • A 3rd generation coffee bean grower and roaster, Alejandro Garcia established one of the first “farm to table” coffee shops in the Chicago suburb of Hinsdale.
  • While his first location opened as a small test concept, the new location in Hinsdale Lake Commons is his first full-scale coffee shop and will include Mexican inspired breakfast and lunch fare.
  • All beans sold from the coffee shop are grown on the owner’s plantation in Mexico and roasted on-site in the store.
  • The space was a former Caribou Coffee that was torn down to the studs and completely rebuilt.
