Fast-Casual, Gluten-Free Concept Bolay Joining Miami's Pinecrest Place

Healthy fast-casual dining concepts are sweeping the nation, and Bolay is helping lead the charge. Created by Outback Steakhouse Co-Founder Tim Gannon and his son Chris, the assembly line-style, 100% gluten-free restaurant encourages diners to customize their own healthy bowls — otherwise known as “bols” — that are packed with a variety of superfoods and proteins. Following more than 15 locations in Florida alone, Bolay’s upcoming storefront will be located at Regency’s Pinecrest Place development in Miami.

Inspired by the belief that “fast casual” can still be extraordinary and nutritious, Bolay’s mission is rooted in a dedication to excellence paired with a spirit of fun. With freshly prepared, crave-able ingredients and bold, zesty flavors, Bolay prides itself on its nutrient-rich menu served up in an inviting, laid-back atmosphere. The name "Bolay" combines the restaurant's signature dish, the bol, with “olay” to evoke the excitement around the brand, good health and great living.

Bolay Assembly Line Items

Serving up bols for a variety of flavor palates and preferences including vegan, Thai, surf and turf and Baja, Bolay also offers refreshing cold-pressed juices, infused teas & local libations as well as catering services. Bolay joins a star-studded lineup of fan favorite merchants including Target, Whole Foods, BurgerFi and Shred415. It is slated to open its doors this summer.
