Regency’s Stefko Boulevard Shopping Center in Bethlehem, PA, is welcoming two exciting new additions to its diverse merchant lineup. These new establishments are set to enhance the culinary offerings of the shopping center, providing customers with a wide array of delicious and unique dining options.
This Is Burritos
Specializing in made-to-order Mexican and American dishes, This Is Burritos opened its doors last month at Stefko Boulevard Shopping Center. The fast-casual eatery occupies a newly renovated 2,000 SF end unit, featuring seating for 20 guests and brand-new kitchen equipment, counters, and furniture.
This Is Burritos offers a diverse menu that includes tacos, burritos, salad bowls, and quesadillas — all customizable with a variety of proteins and toppings. Owner Karen Lin, who operates similar restaurants in Alabama, has also introduced some Southern flavors to the menu. Alongside Mexican favorites, guests can enjoy po’boys, fried jumbo shrimp, and freshly grilled fish.
Pho Viet Royal
Later this year, Pho Viet Royal will join the merchant mix at Stefko Boulevard, marking the restaurant’s second location. Mother-and-son owners Feng Chen and Joe Wang decided to expand operations following the success of its original storefront on Union Boulevard. The new 1,300 SF space will accommodate 20 customers but will primarily focus on takeout. Consequently, the eatery will feature a condensed menu, highlighting the restaurant’s most popular dishes.
As the name suggests, Pho Viet Royal is renowned for its pho, a traditional Vietnamese soup consisting of broth, rice noodles, herbs, and meat — and offers nearly two dozen varieties to choose from. In addition, the menu includes vermicelli rice noodle dishes, grilled meat platters, clay pot selections, and more.

Stefko Boulevard is a destination center anchored by Gerrity’s The Fresh Grocer. The 133,899 SF shopping center features a strong retailer mix that includes Muscle Inc. Gym, Fine Wine & Good Spirits, and Dollar Tree.
