Bacon-wrapped Dates with Goat Cheese

  1. Put the goat cheese in the freezer to firm up.
  2. Slice each strip of bacon in half.
  3. Preheat oven to 400 degrees.
  4. Slice the dates lengthwise to remove the pit and create an opening.
  5. Remove goat cheese from freezer and dice up into 32 bits.
  6. Stuff the goat cheese into the dates.
  7. Wrap each date with bacon and secure with a toothpick.
  8. Arrange evenly on a backing sheet. Make sure it has raised edges to catch the bacon grease.
  9. Bake for 10 minutes.
  10. Rotate the bacon, flipping on the side, so that the bacon cooks evenly. Flip again after 10 minutes to ensure the other side is brown.
  11. Place paper towel on a plate and place the dates on there to drain.
  12. When cool, remove to a nicer plate to serve.

Ingredients

  • 16 slices of bacon cut in half
  • 32 Medjool dates
  • 4 ounces of goat cheese toothpicks

Charleston Cheese Dip

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, mix the mayonnaise, cream cheese, Cheddar cheese, Monterey Jack cheese, green onions and cayenne pepper.
  3. Transfer the mixture to a shallow baking dish, such as a 9 inch pie pan.
  4. Top the mixture with the cracker crumbs and bake until heated through, about 15 minutes.
  5. Remove the pan from the oven and top with bacon.
  6. Serve immediately with the corn chips crackers and bagel chips. YUMMMMMM!

Ingredients

  • ½ cup mayonnaise
  • 1 8‐unce package cream cheese, softened
  • 1 cup grated sharp Cheddar cheese
  • ½ cup grated Monterey Jack Cheese
  • 2 green onions, finely chopped
  • 1 dash cayenne pepper
  • 8 butter crackers, crushed, such as Ritz Corn chips, crackers or bagel chips, for serving
  • 8 slices bacon, cooked and crumbled
