Regency Welcomes Torchy's Tacos to Crossroads Commons in Boulder, CO

Regency is thrilled to announce the arrival of Torchy’s Tacos as an upcoming merchant at Crossroads Commons shopping center in Boulder, CO. The self-described “damn good” restaurant is known for sourcing the highest quality ingredients and serving up a unique and flavorful Mexican-inspired menu of tacos, taco salads, chips and dips and adult beverages to-order, with over 60 locations and a dedicated bandwagon of “Taco Junkies” to boot.


Occupying 3,684 SF alongside other fan favorite merchants including Whole Foods,Barnes & Noble and Elements Therapeutic Massage, Torchy’s will provide both a conveniently located and undeniably delicious addition to the Crossroads Common development for shoppers to enjoy. The fast-casual concept will also encourage foot traffic from outside community members with a love for its tasty fare.

Originally founded in Austin, Texas by passionate chef Mike Rypka, the joint started its humble beginnings inside a food trailer. The original menu included “more experiments than meals,” but after overhearing feedback and iterations along the lines of "Damn, these tacos are good!,” he pursued his brick-and-mortar dreams and the first Torchy’s Tacos location was born.
