Football in our house means carbs and calories don’t count, only flavor, fun, and cheering on our favorite team! Being in the Mile High City, Denver Broncos are a favorite in our house! We're always hoping for them to bring home a WIN.

Whether you’re a sports fan or not, I think we can all agree on the fact that Football season has brought back some sort of “normalcy” for everyone. It just feels, well, not like most of 2020. Tailgating at football games has to be one of my favorite things — sometimes even more than the actual game. Even though we’re not tailgating in person this season, the feel of Fall, football on TV in the background while cooking up some fun game day snacks just makes us feel good, am I right?

Sunday is already a day filled with good food but we’re adding in some fun new recipes this year for game days. We stocked up at our local King Soopers in Regency Centers' Applewood Village and put together something new. Let’s just say it became a touchdown game day bite – MAC-N-CHEESE BITES a la air fryer! (who doesn’t love a healthier version of a fan favorite!?)

Here’s what you’ll need:

  • 4 cups leftover macaroni and cheese refrigerated (we had some homemade mac leftover from the night before, but any mac- n-cheese will work, especially any made with the elbow macaroni!)
  • 2 eggs
  • 2 Tbsp milk
  • 1 cup Japanese panko
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp garlic powder

Instructions:

  1. Using your leftover refrigerated macaroni and cheese, take large chunks, about 2 tbsp, and roll into balls. Set aside. In a bowl, add egg and milk and whisk to combine. Then in another bowl, add panko breadcrumbs, salt, garlic powder, paprika, stir to combine.
  2. Grab a macaroni and cheese ball and place in egg and milk mixture, coating the entire ball. Add to the panko mixture, then add to a lined parchment paper cookie sheet. Place in the freezer for 30 minutes.
  3. Preheat your air fryer on 360 degrees. After the 30 minutes, remove the macaroni and cheese balls from the freezer and place them into air fryer basket in a single layer, making sure they don’t touch. Air fry for 8-10 minutes until light and golden on the outside. Remove, serve, and enjoy.
